Vegan Day Five

Well the alarm clock went off way to early for me this morning. Too much late night election results watching went on! Of course waiting for the California polls to close kept us up about two hours past our normal bed time…but it was totally worth it to witness history! Today’s breakfast consisted of PB toast and a banana with OJ…for it’s quickness factor! Lunch was a PB and banana sandwich on wheat bread with some grapes. Dinner required a tad bit of effort put into the homemade potato pancakes (which the huz had never had before), however minimal effort was involved in heating up some frozen peas and a few Boca Vegan Burgers to round out the meal. The potato pancakes were completely and totally worth the effort and time. They were just like I remember my Grandma making ‘back in the day’. Evening snack is going to consist of some apple crisp if I can motivate myself enough to go peel and slice the apples.
Challenges today: water consumption.

Today I felt: Tired. Although I’m sure it’s from my lack of sleep and being a little busy at work today. I did feel good about digging in to my veggie burger instead of going the animal route. The huz is surprised at my “compassion towards the animals”. He says it’s very Buddhist of me.
